He is well-versed in most popular diets from macrobiotic, herbal enhanced cuisine, vegan, keto, Paleo, gluten-free, celiac etc. As a caterer in California wine country, Nicholas has cooked hundreds of weddings, farm to table events, winery parties and wine pairing dinners. Nicholas keeps it interesting with a diverse roster of events and destinations. From Alaska cooking adventures to luxury yacht charters in the Caribbean. Festival event catering, cooking for the masses under intense conditions at Burning Man or post hurricanes for disaster relief camps.
